Monday Morsel from Mom (2nd Edition)

Picante Chicken

Picante Chicken is one of the easiest, fastest recipes I have from my mom. It is perfect for the nights when you have lots to do, but still want to cook dinner. The prep time is literally about 5 minutes.

Ingredients

* 1 1/2 lb Chicken Breast, boneless & skinless
* 1 cup Long Grain Rice
* 1 cup Medium Picante Sauce
* 1 medium Avocado
* 1 Medium Tomato
* 1 cup Monterey Jack Cheese

Directions

1. Pour rice, broth & picante sauce in a 10" skilled with lid. Top with raw chicken and season chicken with salt & pepper.

2. Cover & simmer until liquid is absorbed, rice is cooked & chicken is done (about 30-40 minutes). Stir after 10-15 minutes & check every 5 minutes after. You may need to add a bit of water.

3. Top with avocado, tomato & cheese. Cover & continue to cook 3-4 more minutes to melt cheese.

* I use Pace Picante Sauce for this recipe. I usually buy the medium, but you could use mild or hot to suit your taste.

* Typically, I serve this as a meal all to itself. Sometimes we'll eat it with tortilla chips or a salad.

* This is another recipe that is relatively low calorie. This recipe yields 6 servings with 330 calories each.
